Description
Salsify is an old-fashioned vegetable, with a beautiful flower. Its bright magenta-purple blossoms, supported by a calyx that extends beyond the petals, makes a striking appearance in a flower garden.
Salsify's (Tragopogon porrifolius) common names include Wild Quinine, Oyster Plant and Vegetable Oyster, since its roots have a distinct "oyster flavor." I think I'll stick to just enjoying the beautiful magenta blossoms.
